The toucan remains a rare bird in private aviculture, but it shares with other captive frugivores (birds of paradise, some starlings) a lesser-known fragility: iron storage disease, or avian hemochromatosis. Why do frugivorous birds store too much iron?

In the wild, a fruit-based diet is naturally low in iron, so the toucan's body evolved to absorb this mineral with maximum efficiency. In captivity, that same mechanism becomes a trap as soon as the ration includes pellets fortified for other bird families, mammal kibble fed by mistake, or excess fruit given without oversight. The liver, unable to clear the surplus, accumulates iron year after year until liver failure sets in.

Building a low-iron ration

The base of a suitable diet remains a pellet formulated specifically for frugivores with a low iron content (generally targeting under 100 mg/kg), rounded out with a variety of fresh fruit and low-sugar vegetables. Avoid generic parrot mixes, which are often too rich, as well as concentrated dried fruit. Some keepers also limit vitamin C sources given at the same meal, since it boosts intestinal iron absorption — better to offer it at a different time of day. Warning signs and monitoring

Hemochromatosis progresses silently for years before clinical signs appear: weight loss, lethargy, a distended abdomen from an enlarged liver, sometimes breathing difficulty. Blood work alone is not enough to confirm the diagnosis; a liver biopsy remains the reference test with an avian vet.
