- Rich in vitamin C: bell pepper (red or yellow, the undisputed champion), parsley, broccoli, fennel.
- Bulk base: endive, romaine lettuce, celery stalks, cucumber, courgette.
- In moderation: carrot and tomato (sugars), spinach and cabbage (2 to 3 times a week).
- Fresh herbs: parsley, dill, basil, coriander — great favourites.
